Ingredients:
2 lb. elk roast
2 medium onions
8-10 white button mushrooms
1/4-cup brown sugar
1/4-cup bourbon or whiskey
2 Tbsp Cabela’s Open Season All-Purpose Seasoning
4 slices cheddar cheese
4 toasted ciabatta buns
1. Fill hopper with Cabela’s BBQ wood pellets
2. Set grill to 250 degrees F on high smoke
3. Cut onions into wedges
4. Slice mushrooms
5. Combine onions and mushrooms
6. Add brown sugar, bourbon and seasoning
7. Toss to coat
8. Divide in half and pour onto foil
9. Fold sides to create dish, repeat with other half of mixture
10. Transfer to baking pan
11. Cook 45 minutes, stirring halfway
12. Cut elk roast into large chunks, transfer to meat grinder
13. Remove vegetables from grill, turn grill up to 450 degrees F
14. Mix in Cabela’s seasoning into ground elk, divide into four patties
15. Smoke patties for 7 minutes, flip, smoking for 6 more minutes
16. Top patties with vegetables and cheese, smoke until cheese melts
